At Casalone they make wines since 1735 on three beautiful hills. Bricco (hill) Santa Maria is where their stone made and aged barbera is made. Yes you read it right stone vats. These vats where dug out by their ancerstor Petrus Heronimus Casalone who built back then a cellar totally gravity fed. The paradox is that being these wines with low PH, the malo on their higher volume barbera will start after the ones in casks… Worth the wait though… an intense nose of raspberries welcomes you. The taste is dry but refreshing of strawberries and raspberries. 

Pairing suggestion:  first or main dishes, particularly with mild cow milk cheeses,  mushrooms risotto or agnolotti.
