Saten Franciacorta

Saten means velvety. It is unique to Franciacorta Appellation and requires the use of just white grapes (Chardonnay or Pinot Bianco but the latter one just to a max of 50%) and a lower pressure (must be lower than 5 bars).  After the first fermentation on native the wine is fermented like all 1701 wines in the bottle by adding frozen must (less than would be added in the other cases)  to restart the fermentation.  Wine is disgorged after a minimum of 30 months.  The resulting is a wine that shows ripeness and creaminess.  The color is deep.  The nose is of pan brioche, toast even gunflint.  The mouth is full and rich the bubbles are very tiny and persistent. Tannins are marked and so it is the acidity.
