On the Terrasses Du Larzac in Languedoc there is a village named St Jean du Fos. One of their hills is called Mas Zenitude. Mas Zenitude is also the name of this tiny winery there where Erik Gabrielson and Frances Garcia make gorgeous wines based on zero zero concept (nothing added in the vineyards nothing added in the cellar).

Vent D’Anges is a Carignan from very old vines. When vines get old they are wiser produce less fruit naturally but those bunches are something else. They pick the fruit mid to end of September. 5% de-stemmed, 35% non de-stemmed and then via gravitation placed in open topped conical concrete vats where the juice is macerated with the skins for 10 days using their natural yeasts with nothing added ; no temperature control; minimal pump over using soft and slow pumping; hereafter they are softly pressed in a vertical press and then pumped back and stored in concrete for one year.

An absolute wine of elegance with notes of cherries and prunes licorice and balsamic.
